SPAM Bibingka Recipe – How To Make SPAM Bibingka

Makes 15-18 servings

Ingredients:

  • 1-2 cans of SPAM Classic, cut into 1cm wide and 3cm long slices
  • 1.5 kg Laon Rice, washed and soaked overnight with just enough water to cover rice
  • 1 can Evaporated Milk
  • 1 cup Coconut Milk
  • 3/4 kg Sugar
  • 1/2 bar Butter, melted
  • 1/4 cup + 2 Tbsp Baking Powder
  • 2 tsp Yeast
  • 10 Whole Eggs
  • 1 cup Gata
  • Banana LeafSlices of Cheese (Optional)

Procedure:

  1. Soak rice overnight, drain when ready to use.
  2. Add an inch of water above the rice.
  3. Using a food processor or blender, grind the soaked rice twice. You can also ask your “suki” from the market to grind the rice for you.
  4. In a medium bowl, mix evaporated milk, coconut milk, sugar, 1/4 melted butter, baking powder, yeast. Let the mixture sit for an hour.
  5. Add the eggs into the mixture after an hour.
  6. Line molder with banana leaf. Depending on the size of the molder you’re using, scoop 1/2 to 3/4 cup of the Bibingka mixture onto the molder.
  7. Top with slices of SPAM Classic. If desired, add slices of cheese.
  8. Bake for 25-30 minutes.
  9. Brush remaining 1/4 melted butter. Dust with sugar.
